Neo

NEO®2 XC is a yeast product selected for its richness in polysaccharides and reducing elements. This combination favours the management of oxidation-reduction mechanisms by allowing a faster integration of wood alternatives during maturation. Its yeast components, rich in reducing elements, are close to the lees and favour micro-oxygenation work by minimising the risks of oxidation. NEO®2 XC contributes to the smooth running of alcoholic fermentation. NEO®2 XC is particularly suitable for the production of red wines aged with wood alternatives in a dynamic system and whose volume and suppleness should be emphasised and whose colour should be protected.
