POLYPRESSE is used in white and rosé winemaking on musts and wines that have undergone brutal mechanical action during the pre-fermentation phases. POLYPRESSE allows to fight against early oxidation phenomena, to the colour intensity of the wines and reduce the astringent character at the end of the at the end of the mouth. POLYPRESSE does not cause over-fining, even at very high doses. The insoluble part (PVPP) quickly carries the flakes downwards. The deposit is compacted and not very voluminous.
