SO.FLAVOUR® is a natural yeast selected in the Côtes du Rhône region by the Sofralab group in collaboration with Domaine Saint-Apollinaire. SO.FLAVOUR® is recommended for the production of modern, concentrated red wines, developing a complex aromatic expression with ripe fruit dominance. SO.FLAVOUR® has the particularity to have been selected on wines respecting the principles of biodynamic agriculture.
CHARACTERISTICS
- Elaboration of modern, concentrated, complex and fruity red wines.
- Elaboration of organic wines.
- Traditional red wine making (pumping over, delestage, or pigeage), thermovinification.
- Vinification of international black grape varieties
