Complex of condensed tannins and ellagitannins specifically developed.
To stabilize the color of red wines obtained through thermal treatment (rapid expansion, thermo, and high temperature pre-fermentative maceration).
CHARACTERISTICS
- The ellagitannins protect the anthocyanins from oxidation by forming a co-pigmentation complex.
- The condensed tannins on the other hand react with the anthocyanins to form covalent binding and thus completely stabilize the anthocyanins.
