SULFATE D’AMMONIUM

AMMONIUM SULPHATE (E517) is used in oenology for its ammoniacal nitrogen content. This compound is essential for the biosynthesis of yeast proteins necessary for cell multiplication as well as for the biosynthesis of parietal proteins essential for the transfer of sugars from the outside to the inside of the cell.
