VIAZYM® ELEVAGE is an enzymatic preparation in microgranulated form, derived from Aspergillus niger and concentrated in pectinases, cellulases and β-glucanases. This enzyme allows the degradation of the yeast walls and releases mannoproteins that favour the organoleptic quality of the wine.
The absence of cinnamoyl esterase in VIAZYM® ELEVAGE prevents the formation of volatile phenols.
