VIAZYM® EXTRACT is an enzymatic preparation derived from Aspergillus niger, concentrated in pectinases and completed by cellulase activities, particularly adapted for skin maceration in white grapes for the extraction of aromas, fullness and fatness. It is also used for maceration in red wine making for the extraction and stabilisation of colour, structure and aromas.  The absence of cinnamoyl esterase in VIAZYM® EXTRACT prevents the formation of volatile phenols.

VIAZYM® EXTRACT is available in liquid and powder form.
