VIAZYM® EXTRACT ONE is an enzymatic preparation derived from Aspergillus niger,  concentrated in pectinases and completed with cellulase activities in order to degrade grape cell walls and extract maximum colour, tannins and aromas. This enzyme is recommended to improve red maceration (pre- and post-fermentation), to facilitate pressing and clarification of red musts. The absence of cinnamoyl esterase in VIAZYM® EXTRACT ONE avoids the formation of volatile phenols
