VIAZYM® EXTRACT PREMIUM is an enzyme preparation derived from Aspergillus nigerand concentrated in pectinases and cellulase activities. It has a very broad spectrum of complementary activities. Thanks to its specific composition in secondary activities (acid protease), VIAZYM® EXTRACT PREMIUM participates in the degradation of proteins in order to avoid the precipitation of the colouring matter. The wines obtained are more complex, highly coloured and the tannic structure confers a good aptitude for ageing. This preparation is to be used on grape varieties with a high polyphenolic potential, or requiring a rapid extraction of tannins for a quicker stabilisation of the colour: either on grapes with a high potential, in long maceration, with a view to the elaboration of wines for ageing, or on partially altered grapes, in order to rapidly extract the tannins and the colour. The absence of cinnamoyl esterase in VIAZYM® EXTRACT PREMIUM avoids the formation of volatile phenols.
