VIAZYM® THERMO is a liquid enzymatic preparation derived from Aspergillus niger, concentrated in pectinases and used after heat treatment (on must at 65°C or higher). It degrades the pectins and colloids released during heat treatment and improves the filterability of thermotreated musts and the corresponding wines. VIAZYM® THERMO leads to a saving of filtration earth. The absence of cinnamoyl esterase in VIAZYM® THERMO prevents the formation of volatile phenols.
